1/2 c non-hydronated margarine
1/2 c light brown or raw sugar
1 egg
1 c oat flour
1 c quick oats
1 c old fashioned oats
1/3 c ground pecans (optional)
Filling: jam, fruit spread, cooked dates, or cooked dried apricots
Greased 8" x 8" or 9" x 9" (bars will be thinner) pan.

Cream the margarine and sugar together. Add the egg and mix well.

You can make your own oat flour by grinding quick oats in a coffee mill. It will take 1 1/2 - 2 cups of quick oats to make 1 cup of oat flour.

Add the oat ingredients and stir well to combine. Press half the mixture into the greased pan. Bake for 10 minutes.

Add the ground nuts to the rest of the mixture if using. Spread your filling over the baked bottom. Crumble the rest of the dough over the top of the filling. Bake for another 10-15 minutes, or until the topping is lightly browned. Cut into bars or squares of desired size while still warm.
